Peanut butter cookie cups are one of the easiest dessert to make. These miniature cookies are mouthwatering! Peanut butter cookie cups are basically a peanut butter cookie with a mini Reese's peanut butter cup in the center. However, you could substitute the Reese's peanut butter cups for Nutella or Hershey's Kisses. These cookies can be made with dough that you make from scratch, refrigerated dough or a packaged peanut butter cookie mix. This is a quick and easy dessert recipe, which is perfect for busy families or if you need to make a last minute dessert. These scrumptious treats are always a hit at parties and bake sales.

Peanut Butter Cookie Cups
- Mini muffin pan (spray with non-stick cooking spray or line with mini muffin baking cups)
- Peanut butter cookie dough (you can make the dough from scratch or use a roll of refrigerator peanut butter cookie dough)
- 1 bag Reese's miniature peanut butter cups
- Sugar for coating
- Preheat the oven to 350 degrees.
- Roll about 1 tablespoon of the peanut butter dough into a ball.
- Roll it in sugar to coat.
- Place it in a prepared mini muffin pan.
- Remove the wrapper from the miniature Reese's peanut butter cup and place it in the center of the cookie dough; press down on it until the dough comes up around the edges of it.
- Place the cookies in the oven and bake at 350 degrees for 8-10 minutes.
- Remove from oven and let cook for 15-20 minutes before removing from the pan.
Variations:
- Replace the Reese's peanut butter cups with Nutella.
- Replace the Reese's peanut butter cups with Hershey's Kisses.
- Dip the Reese's peanut butter cups in melted colored candy to make rainbow peanut butter cookie cups.
